BBQ Glazed Pork Tenderloin with Apple Stuffing
- 1 pork tenderloin (1 lb./450 g) Safeway 1 lb For $3.99 thru 02/09
- 1/2 cup Bull's-Eye Bold Original Barbecue Sauce, divided
- 2 Tbsp. non-hydrogenated margarine
- 1/2 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup water
- 1/2 cup chopped red apples Safeway 1 lb For $0.99 thru 02/09
- 1 pkg. (120 g) Stove Top Stuffing Mix for Chicken
- Heat oven to 375F.
- Place meat on foil-covered rimmed baking sheet or in shallow foil-lined roasting pan.
- Reserve 2 Tbsp.
- barbecue sauce for later use; brush meat with 3 Tbsp.
- of the remaining sauce.
- Bake 15 min.
- Turn meat over; brush with remaining barbecue sauce.
- Bake 15 to 20 min.
- or until done (160F).
- Remove from heat.
- Brush with reserved barbecue sauce; let stand 5 min.
- Meanwhile, melt margarine in medium saucepan on medium heat.
- Add onions; cook 3 min., stirring occasionally.
- Add water and apples; bring to boil.
- Stir in stuffing mix; cover.
- Remove from heat; let stand 5 min.
- Fluff stuffing with fork.
- Serve meat with stuffing.
