Amazing Alfredo
- 1 (8 ounce) package portabella mushrooms
- 1 (16 ounce) package bacon, thick cut preferred
- 1 pint heavy cream
- 12 cup unsalted butter
- 2 (1 5/8 ounce) alfredo sauce mix, Knorr preferred
- 2 (12 ounce) packages fettuccine
- 2 cups 2% low-fat milk
- Cut bacon strips into 1/2" pieces, fry, drain, and set aside.
- Cut mushrooms into small pieces, lightly saute in bacon drippings, and set aside.
- Heat cream, milk, and butter in a medium/large stock pot over medium heat.
- At a light simmer, add the sauce mix and stir well.
- When the sauce has thickened (2-4 mins), reduce the heat and add the bacon and mushrooms.
- Prepare noodles to al dente, drain, and add to the sauce mix.
- Toss the mixture until all the noodles are well coated.
- Plate immediately, top with fresh grated Parmesan cheese, and serve with warm garlic bread.
