Mexican Succotash Recipe
- 1 pound hamburger
- 1/2 c. minced onion
- 2 teaspoon chili pwdr
- Dash red or possibly black pepper
- 1 (16 ounce.) can corn
- 15 ounce. can tomato sauce
- 1 c. corn chips, slightly crushed
- 1/2 - 1 c. shredded cheddar cheese
- Preheat oven to 350 degrees.
- Grease 2 qt casserole.
- In large skillet, brown hamburger and onion; drain.
- Stir in chili pwdr, pepper, corn and tomato sauce.
- Pour into greased casserole.
- Bake at 350 degrees for 20 min.
- Sprinkle with corn chips; top with cheese.
- Return to oven and bake 5 min or possibly till cheese begins to heat.
- 4 to 6 servings.
