Coconut Curry Fish
- 1 whole Lime, Zest And Juice
- 1 teaspoon Cumin
- 1 teaspoon Ground Coriander
- 2 Tablespoons Soy Sauce
- 1 teaspoon Salt
- 2 Tablespoons Brown Sugar
- 2 teaspoons Curry Powder
- 1/2 cups Light Coconut Milk
- 1/4 teaspoons Cayenne Pepper
- 1 pound Tilapia (4 Filets)
- Optional Toppings: Cilantro And Toasted Coconut
- In a medium sized baking dish combine the first 9 ingredients, everything through cayenne on the above list.
- Whisk to combine.
- Add the fish and cover it with the marinade.
- Let the fish marinate for at least 30 minutes.
- Preheat oven to 400 degrees F. Cook fish in marinade for 12-15 minutes, until fish flakes easily.
- Serve with cilantro and toasted coconut.
