Gfcf Polenta Pie
- 1 (18 ounce) package polenta, pre-cooked and gluten-free (you could also use 1-2 corn tortillas instead if you have no polenta)
- 1 (28 ounce) can diced tomatoes
- 1 onion
- 3 garlic cloves
- 1 cup lentils
- 1 green pepper
- 1 teaspoon taco seasoning or 1 teaspoon chili powder, gluten free
- 12 teaspoon salt
- Boil lentils in plenty of water for 30 minutes, then drain.
- You may want to rinse it off too, if you don't particularly like the lentil taste.
- This is purely for a cheap source of protein.
- In a fry pan, add onion, garlic, salt and green pepper.
- Saute for about 5 minutes.
- If you need to use an oil, try coconut or olive.
- Not butter.
- Add canned tomatoes, lentils, and seasoning and cook through until hot.
- Line pan with thin slices of polenta, add filling, then top with polenta.
- Put in oven at 350 degrees F for about 30 minutes.
