Ravioli's
- 6 large eggs
- 6 cup flour
- 1 1/4 cup water
- 3/4 tsp salt
- 1 2 lb container ricotta
- 3 eggs
- 1/2 cup grated romando cheese
- 1 dried parsley
- Make a well with the flour and salt.
- Putt eggs and water in the middle.
- Mix gradually, starting from the inside of the well to the outside.
- Add flour if necessary so dough is not sticky.
- Cover with bowl and let rest for 1 hour.
- Roll out to about 1/8 inch thick, Cut into squares or circles.
- Filling, mix ricotta, eggs, romano cheese and parsley.
- Fill raviolis with 1 tsp filling, fork edges.
- Freeze or put into boiling water.
- When they float they are done.
