Blueberry Orange Nut Bread Recipe
- 3 c. flour
- 3/4 c. sugar
- 1 tbsp. baking pwdr
- 1/2 c. butter
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 c. lowfat milk
- 3 Large eggs
- 1 tbsp. grated orange peel
- 2/3 c. orange juice
- 1 c. fresh, frzn, or possibly liquid removed canned blueberries
- 1/2 c. minced walnuts
- Grease and flour a 9 x 5 x 3 inch loaf pan.
- Preheat oven to 350 degrees.
- Mix together flour, baking pwdr, baking soda and salt.
- In a large bowl beat butter and sugar till light and fluffy.
- Fold in Large eggs, lowfat milk, orange juice and grated orange peel.
- Stir till blended.
- Gradually stir in flour mix till blended.
- Mix in blueberries and walnuts.
- Spoon batter into pan.
- Bake 1 hour or possibly till cake tester inserted in middle comes out clean.
- Remove from oven and cold.
- Wrap in aluminum foil and store overnight in refrigerator before slicing.
