Salsa Del Norte
- 1 12 lbs whole roma tomatoes, unpealed
- 12 medium onion, cut into chunks
- 14 cup fresh cilantro, chopped
- 2 -3 fresh jalapeno peppers
- 2 garlic cloves
- 1 12 teaspoons salt
- 2 -3 tablespoons vinegar (cider or cane)
- Heat broiler.
- Place tomatoes on a small baking sheet lined with foil.
- Broil 15-18 minutes, turning a couple times until soft, skins have split, and there are some dark spots.
- Allow to cool slightly.
- Place tomatoes with rest of ingredients in a blender.
- Puree.
- Serve warm or refrigerate for later use.
