Marinated and Grilled Skewered Chicken

  1. Cut the chicken into strips, 1-1 1/2 inches wide, 1/4 inch thick.
  2. Thread onto bamboo skewers.
  3. Place skewers in a 12 X 7 1/2 baking dish.
  4. Combine rest of ingredients and pour over the chicken.
  5. Cover and chill for 2-3 hours.
  6. Drain.
  7. Grill 3-4 minutes per side.
  8. Garnish with cherry tomatoes and parsley.
