Dhingri Chole (dry white mushrooms with chickpeas)
- 7 oz dried chickpeas soaked overnight
- 2 tsp salt
- 1/2 tsp baking soda
- 1 handful of dried Chinese mushrooms soaked in water 30 minutes
- 5 tbsp ghee or peanut oil
- 2 bunch green onions chopped finely
- 3 tbsp minced garlic
- 2 inch piece of ginger root grated
- 3 large tomatoes chopped
- 1 tsp ground turmeric
- 3 tbsp lemon juice
- 2 tbsp cumin seed
- 1 tsp garam masala
- 1/2 tsp ground chilies
- 1 tsp ground cumin
- 1 cup water
- 3 tbsp fresh coriander leaves
- after soaking chickpeas over night drain cook with water salt baking soda till soft but crisp
- drain mushrooms chop coarsely
- heat the oil in pan fry onions till golden brown add garlic ginger fry 4 minutes add tomatoes turmeric lemon juice cumin seeds garam masala powdered chilies ground cumin stir fry
- add the mushrooms stir fry 1 minute add chickpeas cook for 5 minutes cover 5 minutes more sprinkle fresh coriander
