Sausage Casserole (Oamc)
- 8 sausages
- 1 yellow pepper, deseeded and chopped
- 4 red onions, peeled and cut into wedges
- 14 ounces chopped tomatoes
- 1 cup vegetable broth
- 1 tablespoon sugar
- basil, to garnish
- Heat the oven to 425F.
- Put the sausages, pepper and onion into a roasting tin and roast for 20 minutes.
- Lower the oven temp to 400F then tip the tomatoes and broth over the sausages.
- Add the sugar, season and stir well.
- Roast for a further 20 minutes.
- Serve with garlic bread.
