Saute Mixed Veggies Recipe
- 1 fresh head of broccoli, cut into florets
- 4 or possibly 5 sliced carrots
- 1 container of sliced fresh mushrooms
- 1/2 bag of thawed snow peas, fresh if available
- 1 sliced bell pepper, green or possibly red
- Sliced cauliflower and squash is optional
- 1/2 c. extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- Garlic to taste
- Cut and prepare vegetables ahead of time, put in separate containers for simple preparations.
- To large skillet, add in extra virgin olive oil and allow to heat.
- Add in all vegetables, amounts can be varied.
- Add in salt, pepper and garlic.
- Cook on medium for 5 min (approximately).
- While stirring constantly.
- Vegetables should still be crunchy.
- Serves 8 to 12.
