Authentic Meat Sauce

  1. Finely mince the onion, garlic, and carrot.
  2. Remove the tough stems and lightly crush the tomatoes.
  3. Place the olive oil and garlic in a cool frying pan.
  4. Turn on the heat to low and slowly cook.
  5. Once the garlic has turned golden and fragrant, add the onion and carrot.
  6. Cook patiently over low heat for 15 minutes.
  7. After 15 minutes, raise the heat to medium.
  8. Add the ground meat, salt, pepper, and nutmeg.
  9. Don't break apart the meat too much as it cooks.
  10. Cook thoroughly until browned.
  11. Raise the heat to high and pour in the red wine.
  12. Cook off the alcohol and then add the tomatoes and water.
  13. Once it begins to boil, add the bay leaves.
  14. Turn down the heat to low and simmer for 30 minutes, but remove the bay leaves after 10 minutes.
  15. Occasionally stir the sauce as it simmers until it thickens, then it's done.
  16. (If it becomes too thick, add more water.)
  17. Use it for Bolognese!.
  18. Use it for Milan Style Baked Pilaf!.
  19. Use it for Potato & Meat Baked Pilaf!.
