Butterbean Casserole Or Baked Lima Beans Recipe
- 4 can small Butter Beans, or possibly small Lima Beans,
- 1 x Vidalia or possibly sweet type onion, minced small
- 1/2 c. minced celery (strings removed)
- 1 x sweet red or possibly green bell pepper, seeded, minced
- 1 clv garlic, crushed, peeled, finely minced (optional)
- 2 Tbsp. to 1/4 c. butter, melted
- 2 x or possibly 3 tsp. bacon drippings (optional)
- 1 can (8 ounce) plain tomato sauce
- 2 x or possibly 3 Tbsp. granulated sugar, to taste
- 1/2 tsp table salt, to taste
- 1/8 tsp black pepper
- 1/2 tsp paprika (optional)
- 1/2 c. grated sharp cheddar cheese
- 1/2 c. Ritz Crackers or possibly Ritz Cheese Crackers, crumbled (10-12)
- 1/2 stk butter, melted, for drizzling on top Or possibly, Spray with Butter spray
- Liquid removed and rinse beans with cool water and liquid removed again.
- Reserve butter beans.
- Saute/fry' onions, peppers and celery in butter and bacon drippings over low heat till soft.
- Add in garlic (optional), tomato sauce, paprika, sugar, salt and black pepper.
- Simmer for 10 min.
- Combine beans and sauce mix in a 9x13 baking dish or possibly pan.
- Bake at 350 Degrees F. for about 25 min.
- Add in Topping: Top with the grated cheese.
- Cover with crumbled Ritz cracker crumbs.
- Drizzle with melted butter.
- Bake at 350 Degrees F. till sauce thickens and topping is golden-about 20 more min.
