Stuffed Zucchini

  1. Preheat oven to 350 degrees F.
  2. Cut the zucchini in half lengthwise.
  3. With a spoon, scoop out the seeds.
  4. Chop and reserve the seeds for the stuffing.
  5. In a medium bowl, mix together the ground beef or sausage, onion, garlic powder, bread crumbs, egg and the reserved zucchini seeds.
  6. Place the meat mixture equally into the zucchini halves; mixture should be piled up over the top.
  7. Place the filled zucchini halves into greased 13x9 baking dish.
  8. Top with marinara sauce.
  9. Bake uncovered 45 minutes.
  10. Cover with Parmesan cheese and put under the broiler for a minute or two until golden brown.
  11. Serve with mashed potatoes.
