Stuffed Zucchini
- 2 Large Zucchini
- 1 pound Ground Sausage Or Ground Beef, Whatever You Prefer
- 1 Onion, Diced
- 1 teaspoon Garlic Poweder
- 1/2 cups Bread Crumbs
- 1 Egg, Beaten
- 1- 1/2 cup Marinara Sauce
- 1 cup Parmesan Cheese
- Preheat oven to 350 degrees F.
- Cut the zucchini in half lengthwise.
- With a spoon, scoop out the seeds.
- Chop and reserve the seeds for the stuffing.
- In a medium bowl, mix together the ground beef or sausage, onion, garlic powder, bread crumbs, egg and the reserved zucchini seeds.
- Place the meat mixture equally into the zucchini halves; mixture should be piled up over the top.
- Place the filled zucchini halves into greased 13x9 baking dish.
- Top with marinara sauce.
- Bake uncovered 45 minutes.
- Cover with Parmesan cheese and put under the broiler for a minute or two until golden brown.
- Serve with mashed potatoes.
