Black Bean Soup From The Columbia Spanish Restaurant Recipe
- 1 pound black beans
- 4 cloves garlic, chopped
- 1/4 teaspoon grnd cumin
- 2 quart. water
- 1 bay leaf
- 1 teaspoon oregano
- 3 finely minced med. onions
- 1/2 teaspoon black pepper
- 2 green peppers, cut in strips
- 1 tbsp. salt
- Wash beans and soak overnight in 2 qts water.
- Pour beans into 4 qt soup kettle and boil in same soaking water.
- Cover and cook on medium heat.
- In skillet, saute/fry onions and green peppers in extra virgin olive oil till light golden brown.
- Add in crushed oregano, bay leaf, cumin and chopped garlic.
- Add in to beans, stirring well.
- Add in salt and pepper and cook slowly till beans are tender.
- Serve over white rice and top with minced onion.
- Serves 4.
