Curry Shrimp Rolls
- 1- 1/2 pound Cooked Large Shrimp (peeled, Tails Removed And Deveined), Chopped Into 1/2-inch Pieces
- 1 whole Small Red Onion, Finely Diced
- 1 stalk Celery, Finely Diced
- 1/2 cups Finely Chopped Cilantro Plus More For Garnish
- 1/4 cups Light Mayonnaise Or Miracle Whip
- 1/4 cups Spicy Ranch Dressing
- 1 Tablespoon Curry Powder
- 1/2 whole Lemon, Juice And Zest
- 1/2 teaspoons Salt (or More To Taste)
- 1/2 teaspoons Black Pepper, Or More To Taste
- 4 whole Hot Dog Buns Or Split-top Rolls
- In a medium bowl combine the cooked shrimp, onion, celery and cilantro.
- Set aside.
- In a small bowl whisk together the mayonnaise, ranch dressing, curry powder and lemon juice and zest.
- Season with salt and pepper to taste.
- Pour dressing over shrimp mixture and toss thoroughly to combine.
- Divide the shrimp salad mixture among the buns, sprinkle each with more cilantro and serve.
