Cheri's Tortilla Soup
- 1 large chicken breast, Roasted
- 4 -5 small zucchini
- 1 bunch green onion
- 2 (15 1/4 ounce) cans whole kernel corn
- 2 (10 ounce) cans Rotel Tomatoes
- garlic, crushed, As much as you like
- 3 (32 ounce) boxes chicken broth
- 1 bunch cilantro
- 1 tablespoon canola oil
- 1 shake dried chipotle powder (it's hot, use your discretion)
- Slice Zuchhini's into coins or quarters, depends on size of zucchini.
- Slice Green Onion's.
- 1 Tbl Canola Oil.
- Add to Pot and Saute.
- Add Garlic.
- Add Chipotle Chili Powder.
- Stir and Warm Garlic through.
- Add Broth & Chicken.
- Simmer for about 30 minutes.
- Turn off heat and add chopped cilantro.
- If you so desire, add tortilla chips, some pepper jack cheese and a few slices of avocado to the bowl prior to adding the soup.
- Enjoy!
