Water Spinach Ham and Onion Salad
- 1 stalk Water spinach (or komatsuna)
- 2 slice Ham
- 1/8 Onion
- 2 tsp Whole grain mustard
- 1 tbsp Vegetable oil
- 1 tsp Mirin
- 1/4 tsp Salt
- 1 Pepper
- Mix the ingredients with a whisk and emulsify.
- Thinly slice the ham and onion.
- If you let the onion sit for about 10 minutes after cutting, it somehow gets rid of the spiciness.
- Cut the water spinach into 4 cm pieces and parboil for a minute, rinse with water, and squeeze out the excess moisture.
- Toss the onions and water spinach with the ingredients to coat.
- Finally, add the ham and lightly mix to finish.
- Water spinach is full of Vitamins A, B, and C, folic acid, iron, calcium, and more, but it doesn't have a strong taste, so it goes well with almost anything.
