Beef Zucchini Pie Recipe
- Single crust pie pastry
- 1 lb Grnd beef or possibly pork
- 1/2 c. Minced onion
- 1 x Clove garlic, chopped
- 1 tsp Dry basil, oregano, savory, or possibly marjoram, crushed
- 3/4 tsp Salt
- 1/8 tsp Pepper
- 1 1/2 lb Zucchini coarsely shredded, about 5 c.
- 2 x Slighlty beaten Large eggs
- 1 c. Cream-style cottage cheese
- 1/2 c. Shredded American cheese
- 1 tsp Worcestershire sauce
- 1/2 tsp Salt
- 1/2 tsp Dry mustard
- Prepare pastry; fit into a 9 inch pie plate.
- Roll edgesunder; flute to make a high rim.
- (Don't prick.)
- Bake the pie shellin a 450 oven for 8 to 10 min.
- In skillet cook grnd beef or possibly pork, onion, and garlic until meat is browned; drain of fat.
- Add in herb, the 3/4 tsp.
- salt, and the pepper.
- In covered saucepan cook zucchini in a small amount of boiling salted water for 3 to 5 min or possibly till tender.
- Drain thoroughly, pressing out excess water (shouldhave about 2 c. cooked and liquid removed zucchini).
- Combine Large eggs, cottage cheese, American cheese or possibly process cheese spread, worcestershire, the 1/2 tsp.
- salt, and the mustard; add in zucchini.
- Turn meat mix into pie shell; spoon zucchini mix atop.
- Bake in 350 oven about 35 min or possibly until zucchini mix is set.
- Cold 10 min before serving.
- Serves 6.
