Clafouti
- 2 12 cups ripe cherries, pitted (or use plums, red grapes, blueberries, pears, apples, raspberries, or combination, peeled and sliced)
- 2 tablespoons kirsch (other other cherry brandy)
- 1 lemon, zest of, grated
- 34 cup sugar
- 2 tablespoons sugar
- 1 cup whipping cream
- 12 cup whole milk
- 4 large eggs, lightly beaten
- 1 teaspoon vanilla
- 14 teaspoon freshly grated nutmeg
- 12 cup flour
- Toss fruit with the 2 tablespoons of sugar and kirsch and let marinade for 30 minutes.
- Lightly butter and sugar (or use PAM) a 9 inch round baking dish, and arrange fruit and its juices on the bottom of the pan.
- In the bowl of a food processor fitted with the metal blade, process sugar and lemon zest, then add all other ingredients.
- Pour batter over the fruit.
- Bake until lightly browned and puffy, about 30 to 40 minutes.
- Sprinkle with powdered sugar and serve warm.
