Herb-Rub Salmon
- 8 skin-on salmon fillets
- 2 tsp. oil
- 1 1/4 tsp. salt
- 1/2 c. finely chopped fresh dill
- 1/4 c. finely chopped fresh tarragon
- 1 tbsp. finely grated lemon peel
- 1 tbsp. sugar
- Prepare grill for direct grilling on medium.
- Brush grate until very clean.
- Combine dill, tarragon, lemon peel, and sugar and set aside.
- Pat salmon fillets dry.
- Brush fillets all over with oil; sprinkle with salt.
- Coat flesh sides with herb-rub.
- Push soaked skewers through salmon lengthwise; place, skin side down, on grill.
- Cover; cook without turning over 14 minutes or until just opaque.
- With metal spatula, scrape fillets from grill.
- If skin sticks to grate, remove fillet only.
