Cherry-Pomegranate JELL-O
- 2 cups boiling water
- 2 pkg. (85 g) Jell-O Cherry Jelly Powder
- 1 cup cold water
- 1/2 cup cold pomegranate juice
- 1 can (10 oz/284 mL) mandarin oranges, drained
- 2 cups thawed Cool Whip Whipped Topping
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves

- Stir boiling water into dry jelly powder in 2-L serving bowl at least 2 min.
- until completely dissolved.
- Stir in cold water and juice.
- Refrigerate 1 to 1-1/4 hours or until thickened (spoon drawn through leaves definite impression).
- Remove 1/4 cup of the oranges; set aside for later use.
- Add remaining oranges to jelly; stir gently.
- Refrigerate 30 min.
- or until jelly is set but not firm (jelly should stick to finger when touched and should mound).
- Combine whipped topping and spices; spoon over jelly.
- Refrigerate 4 hours or until firm.
- Top with reserved oranges just before serving.
- Garnish with mint leaves if desired.
- Store any leftovers in refrigerator.
