Cherry-Pomegranate JELL-O

  1. Stir boiling water into dry jelly powder in 2-L serving bowl at least 2 min.
  2. until completely dissolved.
  3. Stir in cold water and juice.
  4. Refrigerate 1 to 1-1/4 hours or until thickened (spoon drawn through leaves definite impression).
  5. Remove 1/4 cup of the oranges; set aside for later use.
  6. Add remaining oranges to jelly; stir gently.
  7. Refrigerate 30 min.
  8. or until jelly is set but not firm (jelly should stick to finger when touched and should mound).
  9. Combine whipped topping and spices; spoon over jelly.
  10. Refrigerate 4 hours or until firm.
  11. Top with reserved oranges just before serving.
  12. Garnish with mint leaves if desired.
  13. Store any leftovers in refrigerator.
