Okra, Tomatoes and Bacon Saute
- 6 slices Bacon, Diced
- 3 cups Okra, Washed, Trimmed And Sliced 1/2 Inch Thick
- 1/2 whole Onion, Diced
- 3 cloves Garlic, Minced
- 3 whole Tomatoes, Cut Into 1/4 Inch Thick Wedges
- 1/2 pints Cherry Tomatoes, Halved
- 1/4 cups Heavy Cream
- 1 dash Salt And Pepper
- Over medium heat cook bacon in a pan.
- Once crispy remove bacon from pan, but leave the bacon grease.
- Set the bacon aside.
- Add okra to the pan and cook for 10 minutes, stirring frequently.
- Add onion and garlic to the pan and cook for 5 minutes, stirring frequently.
- Reduce heat to low and add tomatoes.
- Cook, covered 2-3 minutes.
- Add heavy cream, salt and pepper, mix and continue to cook 3-4 minutes.
- Mix in the crumbled bacon bits and serve.
