Turkey Curry Croissants
- 1 (8 3/4 ounce) can peaches, sliced
- 1 cup cooked turkey, finely chopped
- 14 cup celery, finely chopped
- 2 tablespoons raisins, snipped
- 1 (3 ounce) package cream cheese, softened
- 12 teaspoon curry powder
- 4 croissants, split
- 14 cup peanuts, chopped
- lettuce leaf
- Drain and chop peaches, reserving 2 tablespoon liquid.
- In a medium mixing bowl, combine peaches, turkey, celery and raisins.
- In a small mixing bowl, stir together cream cheese, curry powder and reserved peach liquid until smooth.
- Pour over turkey mixture, tossing to coat.
- Spoon mixture into a 2-cup freezer container and freeze if desired.
- To serve, thaw turkey mixture overnight in refrigerator.
- Spread mixture on 4 croissant bottoms and sprinkle with peanuts, then add lettuce.
- Put on croissant tops and serve.
