Asian Noodles with Sesame Garlic Oil

  1. Begin cooking your pasta.
  2. Heat the olive oil to medium heat.
  3. Peel and chop the head of garlicyes, all of it.
  4. Once the oil is heated, add the garlic and cook just before it turns light brown.
  5. Overcooking the garlic will kill the dish, as the garlic will become extremely bitter.
  6. Transfer the garlic and oil to a bowl, add the sesame oil to the garlic oil, and let cool.
  7. In the meantime, finely chop the bell pepper, mint, and shallots.
  8. Once the pasta is cooked, drain and rinse with cool water to prevent it from overcooking.
  9. Transfer the noodles to a large bowl and add the cooled, infused garlic oil.
  10. Toss the noodles.
  11. Add the fish sauce, white pepper, and chili flakes.
  12. Mix well.
  13. Now add the bell peppers, mint, and shallots, and toss well.
  14. Serve.
  15. The flavors of this dish are amazing.
