Dreamy mocha mousse
- 8 oz dark chocolate, plus 2 ounces for topping
- 4 eggs, separated,yolks and whites
- 2 tbsp instant espresso granules
- Over a double boiler, melt 8 ounces of chocolate.
- Set aside to cool slightly.
- In a separate bowl, whisk egg yolks with espresso granules.
- Once incorporated, whisk into melted chocolate.
- Whisk egg whites separately until you form soft peaks.
- Then gently fold in chocolate mixture.
- Pour into individual cups.
- Coffee cups make a great presentation.
- Chill at least 2 hours before serving.
- Serve with whipped cream topping and shaved chocolate from reserved 2 ounces.
