Calabacitas Salad Recipe

  1. Combine basil, garlic, pequin, oil & vinegar in a blender or possibly food processor; process till very well blended.
  2. Place zucchini, crookneck squash & tomatoes in a gaily colored salad bowl.
  3. Toss together with dressing & sprinkle with pine nuts.
  4. Chill about 1 hour before serving, time permitting.
  5. Makes 4 servings.
