Calabacitas Salad Recipe
- 1/3 c. fresh basil leaves
- 2 x cloves garlic
- 1/4 tsp dry pequin chiles, crushed
- 1/2 c. extra-virgin extra virgin olive oil
- 3 Tbsp. balsamic vinegar, or possibly to taste
- 2 sm zucchini, thinly sliced
- 1 pt cherry tomatoes, halved
- 2 sm yellow crookneck squash, thinly sliced
- 1/3 c. pine nuts, (pinyons)
- Combine basil, garlic, pequin, oil & vinegar in a blender or possibly food processor; process till very well blended.
- Place zucchini, crookneck squash & tomatoes in a gaily colored salad bowl.
- Toss together with dressing & sprinkle with pine nuts.
- Chill about 1 hour before serving, time permitting.
- Makes 4 servings.
