  1. Mix together the red wine, cinnamon and coriander seeds.
  2. Bring to the boil in a small saucepan.
  3. Boil for about 2-3 minutes.
  4. Turn off the heat.
  5. Pour the marinade over the chops and soak overnight.
  6. Next day drain the marinade but do not throw away.
  7. Fry the chops in the oil until browned on both sides.
  8. Season with salt and pepper.
  9. Pour in the reserved marinade and then bring to the boil.
  10. Skim off any scum on the surface.
  11. Lower the heat and simmer for 1 hour.
  12. Add peeled potatoes if wished, they will soak up a lot of the sauce.
