Grannydragon's Gluten-Free Salmon Patties

  1. Pick over the salmon to rid it of skin and spine bones.
  2. Mix all ingredients in a large bowl, except the olive oil.
  3. Form into 8 patties.
  4. Heat a large frying pan.
  5. Add olive oil.
  6. When hot (test with a crumb of one of the patties, when it sizzles it is ready to add the patties to the pan.
  7. Gently!
  8. Fry about 3 minutes per side or until nicely golden brown.
