Baked Pork Enchiladas
- 1 Tbsp. oil
- 1 lb. boneless pork loin, cut into bite-size pieces Safeway 1 lb For $3.99 thru 02/09
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup frozen corn
- 1 jar (16 oz.) TACO BELL Thick & Chunky Salsa, divided
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
- 10 flour tortillas (8 inch)
- Heat oven to 350F.
- Heat oil in large skillet on medium-high heat.
- Add meat and onions; cook and stir 5 to 6 min.
- or until meat is done.
- Stir in corn and 1/2 cup each salsa and cheese.
- Spread 1 cup salsa onto bottom of 13x9-inch baking dish sprayed with cooking spray.
- Spoon 1/4 cup meat mixture down center of each tortilla; roll up.
- Place, seam sides down, in prepared dish; top with remaining salsa and cheese.
- Bake 20 min.
- or until heated through.
