Pasta Carbonara

  1. Fill a large pot with water and bring to a boil.
  2. Add pasta, season well with salt and stir.
  3. In a large skillet, add bacon over medium-heat high.
  4. As the bacon cooks, fat will render.
  5. You will use that fat to cook and flavor the remaining ingredients.
  6. Once bacon is about 2/3 done cooking, add garlic.
  7. Stir to combine.
  8. Cook for 30 sec.
  9. Add onions.
  10. Cook until onions have softened and are translucent, and bacon is browned and crisp.
  11. in a small bowl whisk together eggs, cream and black pepper until homogenous.
  12. Add drained pasta to skillet.
  13. Remove from heat.
  14. Pour egg mixture over pasta.
  15. The heat from the pasta and bacon mixture is enough to cook the eggs.
  16. Garnish with pasley leaves.
