Winter Melon and Tomato Simmer
- 400 grams Winter melon
- 1 thigh Chicken thigh
- 1/2 Onion
- 1 tbsp Vegetable oil
- 100 ml Water
- 2 Buillion cube
- 400 grams/can Canned diced tomatoes
- 40 grams Grated cheese
- 1 dash Salt and pepper
- 1 to garnish Parsley
- Remove the rind, seeds, and insides from the winter melon and cut into bite-sized cubes (about 2 cm).
- Cut the onion into 1 cm cubes and the chicken into bite-sized pieces.
- Lightly flavor with salt and pepper.
- Add some vegetable oil to a frying pan and brown the chicken on high heat.
- Reduce to medium heat and add the onions.
- Once the onions have become translucent, add the ingredients and the winter melon.
- Once it comes to a boil, cover and simmer for about 20 minutes on medium heat.
- Transfer to serving dishes, top with the grated cheese, and garnish with parsley if desired.
