Winter Melon and Tomato Simmer

  1. Remove the rind, seeds, and insides from the winter melon and cut into bite-sized cubes (about 2 cm).
  2. Cut the onion into 1 cm cubes and the chicken into bite-sized pieces.
  3. Lightly flavor with salt and pepper.
  4. Add some vegetable oil to a frying pan and brown the chicken on high heat.
  5. Reduce to medium heat and add the onions.
  6. Once the onions have become translucent, add the ingredients and the winter melon.
  7. Once it comes to a boil, cover and simmer for about 20 minutes on medium heat.
  8. Transfer to serving dishes, top with the grated cheese, and garnish with parsley if desired.
