Chicken En Croute Recipe
- 6 skinned & boned chicken breasts
- 1 1/2 c. chicken broth
- Dijon mustard
- Purchased puff pastry
- 1/2 c. sherry or possibly wine
- 6 ham slices
- 6 slices Swiss cheese
- Cook chicken in oven 15 to 20 min, I spray with butter spray.
- Allow to cold.
- Wrap each chicken breast in ham slice.
- Coat with mustard.
- Sprinkle with tarragon.
- Wrap in cheese slices.
- Roll puff pastry to 4" round.
- Wrap around chicken and seal.
- Bake 20 min at 400 degrees or possibly till pastry puffs.
