Time Management Turkey Barley Soup Recipe
- 10 to 12 pound turkey carcass plus giblets
- 8 c. water
- 2 teaspoon salt
- 1 clove garlic, cut up
- 10 black peppercorns
- 1/2 c. minced parsley
- 2 c. minced onion
- 1/3 c. regular barley
- Dash paprika
- 1 c. sliced carrots
- 1 c. sliced celery
- 1 (10 ounce.) pkg. frzn cut green beans
- Place first seven ingredients in large soup kettle.
- Bring to boil, cover and simmer 45 min.
- Add in barley; cover and continue cooking one hour.
- Remove carcass and giblets.
- Add in paprika, carrots and celery.
- Cover and cook 10 min.
- Meanwhile, remove meat from bones and cut up the giblets, add in to soup with green beans.
- Return to boil, cover and continue cooking 5 min.
- Skim off excess fat and serve.
- Makes 8 servings.
