Green Chile Stew
- 1 lb stew meat
- 1 large onion, small diced
- 12 cup minced garlic
- 2 bell peppers, small diced
- 2 jalapenos, minced
- 2 cups green chilies, roasted, seeded and small diced
- 2 quarts beef stock
- Saute onions, bell peppers, jalapenos, green chiles and garlic until onions are translucent.
- Then add the stew meat and slightly brown.
- Add beef stock and simmer for 30 minutes.
- Adjust seasonings.
- Salt and pepper to taste and serve.
