Peaches and Cream
- 3/4 cup flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 pkg. dry vanilla pudding (NOT instant)
- 3 tbsp. butter
- margarine
- 1/2 cup milk
- 1 can (15 oz.) sliced peaches
- 1 pkg. (8 oz.) cream cheese softened
- 1/2 cup sugar
- 3 tbsp. reserved peach juice
- Combine first 7 ingredients.
- Beat 2 minutes.
- Pour in greased and floured 10x6 or pie pan.
- Chop peaches into small pieces (reserve juice) and scatter over batter.
- Combine cream cheese, sugar and reserved juice.
- Spoon over peaches.
- Leave 1 inch around sides.
- Sprinkle with combined 1/2 tsp.
- cinnamon and 1 tbsp.
- sugar.
- Bake 350F for 30-35 minutes.
- Do not overbake.
- Will be bubbly.
