Buckwheat And Potato Pancakes Recipe

• 1 c. buckwheat flour
• 1/3 c. potato flour
• 3 tsp baking pwdr
• 1/2 tsp salt
• 3 Tbsp. sugar (I used 1 Tbsp)
• 1 x egg or possibly substitute
• 3 Tbsp. oil
• 1/4 tsp vanilla
• 1 1/2 c. soy or possibly rice lowfat milk or possibly use water
• 1/2 c. blueberries (opt)

1. Mix all ingredients and spread thickly on a heated greased grill or possibly frying pan.
2. Turn when brown and cook till brown on the other side.
