Tomato Potato Chowder Recipe
- 2 c. sliced onions
- 1/4 c. butter
- 1 can (28 ounce.) stewed tomatoes
- 1 teaspoon sugar
- 1/2 teaspoon oregano, thyme or possibly rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 c. cubed russet potatoes, scrubbed or possibly peeled
- 6 c. boiling water or possibly stock
- 1 c. light cream or possibly lowfat milk
- Assemble and prepared ingredients.
- Saute/fry onions in butter till just tender.
- Add in tomatoes, sugar, herb seasoning, salt and pepper.
- Simmer 15 min.
- Add in potatoes and water.
- Simmer till potatoes are tender, about 15 min.
- Stir in cream or possibly lowfat milk and heat through.
