Sausage And Bean Casserole
- 12 medium sausages
- 2 can chopped tomato
- 2 can kidney beans
- 1 can borlotti beans
- 1 can pinto beans
- 2 medium ish sized onions
- 2 clove garlic
- 1 dash olive oil
- 1 pinch salt and pepper
- 1 tsp paprika
- 1 tsp dried mixed herbs
- Gently fry the sausages in olive oil until nicely browned.
- Dice the onions and garlic whilst waiting for the sausages to brown.
- Remove sausages from pan when ready and put to one side.
- Fry onions and garlic in pan until soft.
- Cut the browned sausages into nice bite sized chunks and add to a heavy oven proof casserole dish or large saucepan.
- Add the cooked onions and garlic to the sausages along with the 2 cans of chopped tomatoes.
- Heat gently on the hob.
- Place your various types of beans in boiling water and simmer for 5 minutes to soften, then drain and add to sausages.
- Stir well, adding your herbs and salt and pepper.
- Simmer until the sauce thickens to your preference, stiring occasionally.
- Put a lid on it and place into an oven at about 150 / 180F C for 30 / 45 mins.
- Check occasionally to ensure that it does not dry out !
- You should have enough for 6 people depending on how hungry they are!
- I like to serve this dish with green beans and massive chunks of crusty bread and butter.
