Mango Chicken Quesadillas
- 2 Tablespoons Olive Oil
- 6 whole Chicken Tenders Or 2 Chicken Breasts Sliced Into Three Sections
- 1 teaspoon Salt
- 1 teaspoon Freshly Ground Pepper
- 1 whole Onion, Sliced Thin
- 4 whole Flour Tortillas
- 1 cup Queso Quesadilla Or Melting Cheese Of Your Choice
- 1 whole Mango, Peeled And Sliced In Thin Wedges
- 1/2 cups Chopped Cilantro
- In a large skillet over medium heat add olive oil.
- Sprinkle chicken with salt and pepper.
- Add chicken to the pan.
- Brown chicken on each side for about 3 minutes per side, until cooked through and juices run clear.
- Remove chicken from pan, set aside.
- Add onion to the pan, stir the onion around to remove the crispy chicken bits from the bottom of the pan and cook over medium heat for another 3 minutes.
- Remove onions from pan and set aside.
- Slice chicken.
- Place a tortilla in the same skillet and heat it over medium heat until heated through, flipping once.
- To one side of a tortilla add cheese, sliced chicken, mango, onions and cilantro.
- Fold the other half of the tortilla over (think omelette) and press the sides together with a spatula, lower heat and allow cheese to melt.
- Place on cutting board and cut into wedges.
- Repeat with remaining tortillas and filling ingredients.
