Apple Apricot Chops Recipe
- 2 lb pork filets or possibly chops
- 1 c. minced apple
- 1 c. minced dry apricot
- 1/2 c. fresh or possibly dry cranberries (optional)
- 1 med onion minced
- 2 x celery ribs sliced in 1/2" pcs
- 1/2 c. apple juice
- 1/2 c. brown sugar
- 1/4 c. dry sherry or possibly wine (or possibly more apple juice) Salt to taste Freshly-grnd black pepper to taste
- 1 1/2 Tbsp. cornstarch mixed with
- 2 Tbsp. cool water
- Combine all ingredients; cover and cook 7 to 9 hrs on LOW.
- A half hour before serving, pour liquid into a separate container to skim off excess fat.
- Stir in cornstarch mix and return broth to crockpot.
- Continue cooking on LOW till smooth and thickened.
- This recipe yields 4 to 6 servings.
