Guava-Glazed Chicken

  1. Place guava paste, water and red pepper in medium microwaveable bowl.
  2. Microwave on HIGH 1 min.
  3. ; stir until paste is dissolved and mixture is well blended.
  4. Stir in ham; set aside.
  5. Heat 1/4 cup of the dressing in large nonstick skillet on medium heat.
  6. Add 6 of the chicken thighs; cook 2 to 3 min.
  7. on each side or until browned on both sides.
  8. Remove chicken from skillet; cover to keep warm.
  9. Repeat with remaining 1/4 cup dressing and remaining 6 thighs.
  10. Place all thighs in skillet; top with guava mixture.
  11. Bring to boil.
  12. Reduce heat to medium-low; cover.
  13. Simmer 20 min.
  14. or until chicken is cooked through (165 degrees F).
  15. Remove chicken and sauce from skillet; place in serving dish.
  16. Cover to keep warm.
  17. Add spinach to same skillet; cook 5 min.
  18. or until wilted, stirring occasionally.
  19. Spoon spinach onto serving plate; top with the chicken.
