Tex Mex Layer Dip Recipe
- 1 (10 1/2 ounce.) can bean dip or possibly refried beans
- 2 avocados
- 2 tbsp. lime juice
- Salt and pepper to taste
- 1 c. lowfat sour cream
- 1 packet taco seasoning mix
- 1 bunch scallions, minced
- 1 (6 ounce.) can pitted black olives, minced
- 2 tomatoes, minced
- 1/2 pound Monterey Jack cheese, shredded
- Tortilla chips
- Spread bean dip in the bottom of a glass serving bowl.
- With a fork, mash the avocados with the lime juice and salt and pepper.
- Layer on top of the beans.
- In a bowl combine the lowfat sour cream and seasoning packet.
- Layer on top of the avocado.
- Can be made in advance up to this point.
- To assemble: Layer the scallions, then olives, then tomatoes, ending with the cheese.
- Serve with tortilla chips.
