Tilly's Apple Spice Cake
- 2 cups flour
- 2 tablespoons cocoa powder
- 34 teaspoon salt
- 1 12 teaspoons cinnamon
- 12 teaspoon ground cloves
- 12 teaspoon nutmeg
- 12 teaspoon allspice
- 12 teaspoon baking soda
- 1 12 teaspoons baking powder
- 1 cup raisins (or chopped dates)
- 1 12 cups sugar
- 12 cup shortening
- 2 eggs
- 1 12 cups applesauce (or apple pie filling)
- Grease and flour a 8x8 baking pan.
- Set aside.
- Preheat oven to 350F.
- In a medium bowl, combine all dry ingredients.
- Add the raisins (or dates) and stir to coat well.
- Set aside.
- Cream shortening and sugar for 2 minutes.
- Add eggs one at a time.
- Beat well.
- In small portions, alternately add the flour-raisin mix and applesauce.
- Begin and end with flour.
- Pour the mixture into the prepared pan.
- Bake at 350 for 40 minutes or until a cake tester inserted in center comes out clean.
- Cool completely on a wire rack.
- Sift powdered sugar over the cake just before serving.
