Vanilla Mousse Cheesecake
- 40 Vanilla Wafers
- 3 tbsp Butter or Margerine
- 4 packages Philadelphia Cream Cheese (8 oz. each)
- 1 cup Sugar
- 1 tbsp Vanilla Extract
- 1 tsp Vailla Extract
- 3 Eggs
- 8 oz Cool Whip
- Preheat oven to 325F
- Mix wafer crumbs and butter
- Press mixture onto bottom of 9-inch springform pan
- Beat- 3 pkg cream cheese, 3/4 cups of sugar and 1 tbsp vanilla with mixture until blended.
- Add eggs, 1 at a time, mixing on low speed after each just until blended.
- Pour over crust.
- Bake - 55 to 60 min.
- or until center is almost set.
- Run knife around rim of pan to loosen cake; cool completely in pan.
- Beat - remaining cream cheese (8oz), sugar (1/4 cup) and vanilla extract (1 tsp) with mixer in large bowl until well blended.
- Wisk in cool whip; spread over cheesecake.
- Refrigerate 4 hours.
- Remove rim of pan before serving cheesecake.
- Garnish with fresh berries if desired.
