Vanilla Mousse Cheesecake

  1. Preheat oven to 325F
  2. Mix wafer crumbs and butter
  3. Press mixture onto bottom of 9-inch springform pan
  4. Beat- 3 pkg cream cheese, 3/4 cups of sugar and 1 tbsp vanilla with mixture until blended.
  5. Add eggs, 1 at a time, mixing on low speed after each just until blended.
  6. Pour over crust.
  7. Bake - 55 to 60 min.
  8. or until center is almost set.
  9. Run knife around rim of pan to loosen cake; cool completely in pan.
  10. Beat - remaining cream cheese (8oz), sugar (1/4 cup) and vanilla extract (1 tsp) with mixer in large bowl until well blended.
  11. Wisk in cool whip; spread over cheesecake.
  12. Refrigerate 4 hours.
  13. Remove rim of pan before serving cheesecake.
  14. Garnish with fresh berries if desired.
