Chocolate Chip Banana Nut Muffins

  1. In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
  2. In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
  3. Add the flour mixture to the creamed mixture just until moistened.
  4. Fold in the walnuts and chocolate chips.
  5. Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
  6. Bake at 350 degrees for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
