Blanka's Pork Patties Recipe
- 3/4 lb curly cabbage - (1/2 med head)
- 1 can Spam luncheon meat - (12 ounce)
- 1 med onion
- 2 x garlic cloves
- 2 x Large eggs divided
- 3/4 c. dry bread crumbs divided
- 1/8 tsp freshly-grnd black pepper
- 1 Tbsp. water Veg. oil
- Cut cabbage into wedges; remove core.
- Cook in small amount salted boiling water till tender; drain well.
- Finely chop cabbage or possibly process in food processor using chopping blade.
- Transfer to medium bowl.
- Finely chop Spam, onion, and garlic or possibly process in food processor.
- Mix into cabbage with 1 egg, 1/4 c. bread crumbs, and pepper.
- Shape mix into 8 balls; flatten to make patties about 1/2-inch thick.
- Beat remaining egg with water.
- Dip patties first in egg-water mix, then in remaining bread crumbs to coat both sides.
- Saute/fry in 1/4-inch oil over medium heat till bronwed on both sides.
- This recipe yields 8 patties.
- Yield: 8 patties
