Mini Ice Cream Cakes
- 24 each Oreo Cookies
- 2-1/4 qt. vanilla ice cream, softened, divided
- 1-1/2 cups Oreo Medium Cookie Pieces
- 1-1/2 cups multi-coloured sprinkles
- Place 12 (4x1-1/2-inch) ring moulds in parchment paper-lined sheet pan (or place 1 ring mould in prepared sheet pan for trial recipe).
- Place 1 Oreo Cookie in centre of each mould; cover with 3 oz.
- (85 g) ice cream, spreading ice cream to completely cover paper in bottom of each mould.
- Spoon 2 Tbsp .
- (30 mL) Oreo Pieces onto centre of each ice cream layer; cover with second layer of 3 oz.
- (85 g) ice cream.
- Press remaining Oreo Cookies into centre of each ice cream cake.
- Carefully remove rings.
- Freeze cakes 2 hours or until firm.
- Roll side of each ice cream cake in 2 Tbsp.
- (30 mL) sprinkles.
- Place in tightly covered container until ready to serve.
