Mini Ice Cream Cakes

  1. Place 12 (4x1-1/2-inch) ring moulds in parchment paper-lined sheet pan (or place 1 ring mould in prepared sheet pan for trial recipe).
  2. Place 1 Oreo Cookie in centre of each mould; cover with 3 oz.
  3. (85 g) ice cream, spreading ice cream to completely cover paper in bottom of each mould.
  4. Spoon 2 Tbsp .
  5. (30 mL) Oreo Pieces onto centre of each ice cream layer; cover with second layer of 3 oz.
  6. (85 g) ice cream.
  7. Press remaining Oreo Cookies into centre of each ice cream cake.
  8. Carefully remove rings.
  9. Freeze cakes 2 hours or until firm.
  10. Roll side of each ice cream cake in 2 Tbsp.
  11. (30 mL) sprinkles.
  12. Place in tightly covered container until ready to serve.
