Algerian Cooked Carrot Salad Kitchen Safari Recipe

  1. Scrape the carrots and quarter lengthwise.
  2. Cook in a little water with garlic and a healthy pinch of salt and sugar, for 15 min.
  3. Drain and chill.
  4. Just before serving, cover with lemon juice, aobut 1/4 tsp.
  5. salt, cayenne and cumin.
  6. Sprinkle with minced parsley.
